There are about 2.5g carbs in a cup. As long as you count it in your carb count for your meal it should be ok. Just like anything else, make sure you test to see if it affects your blood glucose level.
That is a cup of raw mustard greens, Lauren?
Curious as to why not raw?
Because in India , mustard green is not cooked alone but with other leaves like spinach , fenugreek leaves etc .

With lot of butter
Oh, I see. That's how I usually cook mustard greens, with other leafy greens, haven't tried the butter but may do that next time. Sounds good! Thanks!
tawanna , you will love this dish . Also add lot of garlic and ginger
I do add garlic, ginger root, have also added this when I've fermented greens or canned them. Can't wait to try the butter, soon!
When you cook them, the carb count changes. It’s about 2g carbs in 1/2 cup cooked.
I don't understand how to eat little because I find myself always sneaking
Measure out the portion you should eat and put the rest away immediately! If you are eating enough protein and fat, and limiting carbs, you should not be getting hungry.
Hello everyone- shunning carbs is best but controlling portions is also good
